Helping a small town 30 miles SouthEast of Austin, Texas rebuild after a devastating wildfire swept through the town destroying more than 1600 homes and buildings.

Pray with us that the team will be an effective witness of God's love in that Texas community.

Leather Floor?

Nope, it's brown paper bag flooring...that looks like leather! Google it.

The boys have been re-doing our bedrooms. Fixing & painting walls, new flooring & trim etc.

This is what our finished floors look like -- though the trim is not done yet etc.

We rather like it.

We have already noticed that it is considerably warmer than our laminate floors.

We'll have to live on it to see how durable it is, but testimonials we read say that it is very durable. We'll give it a go! If it scratches, we can always add another coat of finish ... or cover it with rugs, lino etc.

At less than $100 per room, it was worth the try. Loads of experience. Tons of fun. A learning experience.

It's Official

Carsyn's violin has been complete since June already, but with all the going's on around the farm there's been no time to post pictures etc.

Besides the finish was still curing ... and he hadn't slipped in to the city to get the official appraisal (for insurance purposes).

That happened last weekend.

The verdict is ... he has created an instrument with a $1,400.00 value. That is really pretty good for his first solo attempt as a Luthier!

He already had a buyer for the violin so it is sold and gone ... and he misses it dearly.

So do we 'cause Carsyn has played it a lot. It sings beautifully, easily.

He'll be making another one ... and another ... and another ...

He's good at it.

This is his passion.

This is his gift.

Way to go, Carsyn! We're so happy for you. Thanks for making the world a little sweeter!

Frosty Night

Two years ago on June 8 we had a killer frost. All our efforts were in vain. We had to buy new transplants and re-seed most everything.

Thankfully, this year, June 8th, 2011, God spared us that. Our efforts to ward off the frosts were necessary and enough. God kept the frost light. Yet, had we not been faithful to do our part and use the resources we had at our disposal we could have lost a lot.

Today, we're cleaning up.

The weather going forward looks great. Whew!

Re-Purpose Garden Projects

"Collars" to keep cut-worms off cabbage, brocolli and cauliflower can be made from fish tins, card board tubes, or pop bottles. We need so many we have to get creative and try anything...but they all have a new purpose!

Milk jugs serve as individual "hot caps" for bedding plants or seeded cucs, sqaush a& melons. Just make two flaps out of the bottom of the jug, then press the jug into the dirt with the flaps out in opposite directions and pile on the dirt to keep the wind from whisking away your hot caps. It works for me!

Old socks have served to keep frost off newly germinated seedlings and/or transplants in our gardens in the springtime. while small socks cut open to lay flat cover seedlings, larger socks can usually be cut open and then in half to make two transplant "blankets". It only takes a few minutes to protect a whole bunch of plants ... especially if you only need to grab a pail of "transplant blankets" and put cover the plants. Evenings when frost is threatening are usually calm so there is no risk of the little "blankets" blowing off. Just go early the next morning to collect them all into your basket again. Then I have laundered them so the moist rags wouldn't go moldy in my basket ... 'cause, of course, I want to save them for the next go 'round...or next year.

We keep all of these things to re-use them annually. That way we only have to do the work of collecting and cutting them once.

- the "collars" get stored in old broken laundry tubs in the shop.

- the sock "blankets" also get stored in a re-purposed five gallon pails with a lid ... to keep out mice & cats & other critters that might like to make a snug home in my re-purposed "blankets".

- the "hot caps" are strung up on long lengths of old baler twine then hung behind the shop 'till next year ... I wish I had a picture to show you of the guys carrying the string of hot caps out to the field garden this spring -- it looked like they had a huge white feather "boa" scarf, lol!

The Spider

Our guys have nicknamed this little tractor "The Spider". It is a 1935 Ford 9N that we bought off a neighbor. We also have the manuals to go with it. So it may well be something the boys can learn & tinker on ... though thankfully, right now it does not need tinkering. It's ready to go to work.

Putting the narrow wheels at their maximum width adjustment makes this an excellent row-crop tractor.

Spring is the time for new life on the farm. It is totally exciting for everyone to see the new little calves bouncing around. See?

This little one looks like his father, "Curly".

We are only expecting 11 calves for 2011. Six are already on the ground - four of those were born on Monday. Can you imagine the excitement level that day?

Raisin Toast

Finally here is a breakfast special that I claim responsibility for. After approximately 24 years of making whole wheat bread in my Bosch machine using certified-organic wheat and fresh ground certified-organic flax I have tried and tested making Raisin Bread.

It is so easy ... and so yummy! I should have tried it much sooner.

Nevertheless, here is my recipe, it's no secret. Try it if you will.

Whole Wheat Raisin Bread

5 cups warm water
1/4 cup liquid raw honey
1/3 cup extra virgin olive oil
3/4 cup fresh ground flax
7 cups fresh ground whole wheat flour
3 TBSP yeast
Let rise about 10 minutes. Then add:
2 eggs
1 TBSP sea salt
1 Tsp vitamin C crystals
6-7 cups Whole wheat flour, fresh ground - add flour a cup at a time until dough comes cleanly off the sides of the mixer bowl. Knead another 10 minutes.

For Raisin Bread: add 2 heaping TBSP ground cinnamon and an additional 2/3 cup liquid raw honey and 1 cup of organic raisins. Knead until well incorporated. If the sides of the mixer bowl are sticky, add about 1/4 or 1/2 cup additional whole wheat flour. Knead again to incorporate that additional flour.

Remove dough from mixer onto oiled countertop. Divide dough into 6 portions. Oil 6 stainless loaf pans, form loaves and let rise about 40 minutes, until nice and high. Pre-heat oven to 350 degrees. Bake for 25 minutes. Remove from oven. Let sit for 5 minutes then remove from pans onto bread rack to cool.
Enjoy fresh or toasted!

Pumpkin Granola Bars

Ok, finally, no pictures, but ... here's the recipe for Pumpkin Granola Bars that I mentioned in an earlier post:

Pumpkin Granola Bars

3 1/4 cups old fashioned oats
1/2 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
¾ cup brown sugar
½ cup pumpkin puree
¼ cup applesauce
¼ cup honey
1 teaspoon vanilla extract
1 cup chocolate chips
1. Preheat oven to 350 degrees F. Spray an 8 by 8 baking pan with cooking spray and set aside.
2. In a large bowl, whisk oats, spices, and salt together. Set aside.
3. In a medium bowl, whisk brown sugar, pumpkin, applesauce, honey, and vanilla extract until smooth. Pour over oats and stir well, until all of the oats are moist. Stir in chocolate chips.
4. Evenly press oat mixture into prepared pan. Bake for 30-35 minutes or until golden brown. The pumpkin keeps the bars moist, so make sure they are golden and set-you don’t want them to be under baked. Remove from oven and let cool on a wire rack for 5 minutes.
5. Using a sharp knife, cut into bars. Remove from pan and let cool completely.
Makes 10-12 granola bars*Note-these didn’t last long in our house, so feel free to double the recipe and bake in a 9 by 13 pan.

Slow Cooker Oat Groats

Another new breakfast favorite around here uses steel cut oat groats.

Groats are less processed, therefore healthier. They are also less expensive and with this recipe? They are quick & easy ... not to mention, yummy!

Another of my crew members has taken up this breakfast feature. It is a good job for little people -- no hot stuff, just throw it all together and turn it on. It gives them responsibility and makes them feel so important because ... the family is counting on them!

Prepared the night before it is ready to fit everyone's schedule in the morning:

It works best to use a heavy bowl that can sit in a water bath in your slow cooker. Trust me, clean up is a whole lot easier because the oats stick onto the crockpot in a crusty layer that is hard to get off, not to mention a sorry waste.

Slow Cooker Oats
1 1/2 oat groat
6 cups water
1/2 tsp. sea salt
Handful of raisins

Toss these into your heavy bowl. Place it into the crockpot. Fill crockpot with water up to the level of the water in the bowl. Turn on low for 8-10 hours.
If you'd it chewier, just set the crock onto the keep warm setting.

In the morning, add a sweetener like maple syrup or honey. Garnish with pecans or other nuts if you desire. Or drizzle with cream.
Then sit down and enjoy!

It's just that easy!

Homemade Healthy Chocolate

Coconut oil is VERY healthy for you. About 3 Tbsp. per day is the required amount you should try to ingest for optimal health benefits.

Chocolate, an all time favorite, is a great way to eat coconut oil.

Coconut Chocolate Almond Bark

3/4 cup virgin coconut oil
3 tsp. dutch cocoa
1/4 tsp stevia, to desired taste
1/2 cup sliced almonds (use whole almonds if desired -- or other nuts)

Mix until smooth. Pour into a wax paper lined pan/container. Freeze for 30 minutes. Remove, break into pieces. Enjoy!

Granola Recipe

We've been revamping breakfasts here lately, trying to make them healthier and less expensive along with adding new variations into the menu.

Granola has long been a favorite and for nearly as long, I've been thinking I should try making my own. An interesting recipe showed up in my search called Pumpkin Granola.

It caught my attention because we have a lot of pumpkin and hubbard squash from the bounty of last summer's harvest and I'm needing more ways to use it up.

WELL! This is a HIT!

Even if you don't like pumpkin, you should give this a try. Pumpkin Granola is absolutely delicious! Filled with flavor, spices and health! Inexpensive too, I might add. This one scores high all around for taste, health, cost and ease of preparation!

Eat it plain. Or use it for topping yogurt or ice cream, porridge or pudding. As a cereal with milk, it's better than all others ... or mix it with others.

And when you've tried that. Try making Pumpkin Granola Bars -- similar, but definitely easier to pack & neater in the car.

Pumpkin Granola just can't be beat!

Oh, btw, we have found that hubbard squash is wa-a-ay better than pumpkin in most recipes. It is sweeter, smoother and denser(not as "watery"). The picture below is a hubbard squash beside a size 12 shoe:

Where do you find hubbard squash, you say? At Klasse Woods Natural Farm, of course! Our biggest hubbard in 2010 weighed 47 lbs.! That's a whole lot of 1/2 cup packages for the freezer. Then again I make 1 cup packages 'cause I usually double or quad-ruple the recipe so that I have at least enough for a week, lol!

Nothing like cooking for a growing crew big time ... the easy way? I let one of the crew manage that operation. They love it. So do I! Lol!

Here's the recipe:

Pumpkin Granola

6 cups rolled oats

¾ tsp. salt
¾ cup brown sugar
½ cup pumpkin puree
¼ cup applesauce

1. Preheat the oven to 325° F. Line a large baking sheet with parchment paper and set aside.
2. In a large bowl, combine oats, spices, and salt. Mix well.
3. In a medium bowl, whisk together brown sugar, pumpkin puree, applesauce, maple syrup and vanilla extract. Whisk until smooth. Pour wet ingredients into oat mixture and stir until the oats are evenly coated. They will be moist. Evenly spread the mixture onto the prepared baking sheet.
4. Bake for 20 minutes. Remove pan from the oven and stir. Bake for an additional 15-20 minutes or until the granola is golden and crisp. Remove from the oven and stir in dried cranberries and pepitas. Let cool completely. Store in an airtight container.
*Note-serve granola with yogurt, milk, or enjoy plain.

Making Music

In some ways, I guess you could call us a musical family.

Singing in harmony is a recent favorite pastime slowly becoming a ministry. It is always a blessing to sing together. Our hearts are filled with praise to the Father!

Making instruments is another pass time. Our oldest two made their first violin at ages 14 and 11. Since then, Carsyn has had another in the making ... will this be the year that it is completed? Going it alone, without an instructor and in between summer farming seasons draws out the process, but progress is once again being made now that it is winter.

Mostly carved by hand, this project requires a lot of patience, precision and persistance.

Dream Dog

A boy's best friend is his dog, right? And every boy dreams of hooking his dog up to a wagon ... or a sleigh, right?

Our boys did! They have a dream dog!

Misty, willingly pulls firewood through the snow on the sleigh. She makes the job faster & funner!

After practice with the wood, Misty was "trained" and now gives 2 year old (tomorrow is her B-day)"Taya" fun, fast rides too... Faith Mattaya knows how to hang on really tight. She loves it!! It's one of the joys of living in a house full of boys!

Poplar Project Complete

Do you recall the poplar project that our young men started last spring? Well, the whole project took 9 months, but it is now complete & functional.

The feeling of accomplishment is so rewarding. A bunk bed for our six year old twins. They are thrilled with their new bed(s).

It was a long drawn out process. Cutting the trees ... peeling off the bark ... drying the logs took the longest though it was no work at all, lol! ... then cutting the tenons & putting the pieces together ... Corbyn did the lacquering after-hours at the cabinet shop where he works (added blessing) ... finally, assembly and testing was so good to see!

Along the way, the guys have found other uses for their tenon cutters:
... Corbyn designed a can crusher for a contest at his workplace. The boss challenged his workers to come up with something for the lunch room -- rather than purchasing a can crusher. Functional & fun though not at all like the other entries, lol!:

Glorious Gift

These angels were a free gift just for me -- on Thursday, the Winkler MCC store was giving away all their remaining Christmas decorations. There were few shoppers and fewer remaining Christmas things, but these angels caught my eye. I immediately felt so blessed to be "gifted" them.

Infinitely more precious is the free gift of God's Son, Jesus, Whose coming was announced by angels:

"Fear not: for behold, I bring you good tidings of great joy,
which shall be to all people.
For unto you is born this day ...
a Saviour, which is Christ the Lord ..."
And suddenly a multitude of heavenly host praising God, and saying,

"Glory to God in the Highest,
and on earth peace,
Good will towards men."

This greatest glorious gift is for you too!

I've said it before, now I can show you ... cardboard boxes make wonderful toys! In this case, the bigger the better. And this box is HUGE as far as boxes go. I expect we'll have a permanent fixture in our basement ... at least for the winter.

Today is like Christmas at our house...and December 25 is still 5 days away!

A big new freezer arrived in a huge cardboard box. One look and there were six excited young men planning a playhouse for little sister. They had just as fun making it as she's having playing in it.

Winter's Lace

Winter has arrived with mounds of white stuff. The sparkling snow on a sunny day or the swirling snowflakes floating down all make the landscape so pretty & pristine.

I'm reminded of God's words,

Sweet Treat

Most candy dishes are filled to overflowing this time of year. Goodie bags are frequently handed out to children at schools, at Church programs and at Grandma's.

There is entirely too much of a not-so-good thing around.

How is a parent to keep their children healthy and happy through it all ... especially if one of the children is diabetic?

We've struggled with that for more than ten years now. Candy is deemed a reward, a good thing when in reality it is not. Especially to a diabetic, but just as certainly to every child.

The truth is sugar is deadly for everyone ... in the long run.

We can't always say "No" to a child when candy is in question. Oftentimes it also hurts them to be singled out as "different" & given their own "special" candy. To them it isn't special, they just want to be normal & get the same junk everyone else gets without limits like everyone else ... BUT diabetics CAN'T.

Sometimes it would be nice to change the world ... yet in reality? Life doesn't work that way.

So, what do you do to treat you children?

We have found a few things that compensate: one is gum & candies made with the sweetener called xylitol. "Spry" is the brand we've come to enjoy ... it was first recommended to us by our dentist. The bonus? Xylitol inhibits cavities and though it does have a carbohydrate count it does not cause a spike in the blood sugar. Win/win!

We have tried the Spry gum in four flavors: cinnamon, spearmint, peppermint, and fruit flavored - they have a new green tea flavor out now.

The Spry mints/candies are in four great flavors: lemon, berry, peppermint, spearmint and a new raspberry that we haven't tried yet, but the rest are yummy!

More candy ideas here.

At our house, gummy vitamins and flavored vitamin C work as "treats" also. Yay for Mom, cause I like 2 for 1's!!!! Acidophilus rates right up there with candy among my littles too. Of course, we limit these to the rating on each bottle.

There are other treats of course, inedible ones like floss pics, erasers, etc, but I'm always looking for more ideas.

There's been so much happening lately, I haven't known what to give priority post ...

With the tractor came the opportunity to get a myriad of things caught up before the snow. It's still not all done, not that I have to do it, but guess who gets to do the majority of the inside work? I don't mind, but there certainly is much to keep me busy. Needless to say, keeping you posted has not been top priority.

Some of us made a quick much needed trip to Saskatchewan to visit family over Thanksgiving. It was a good, much-needed well-earned break. Yes, we have much to be thankful for.

Upon our return we've gotten the remainder of the chickens into freezers, started the winter Farmer's Market and finally started school full bore. Like I said before, we're always learning, but now it is time to put in some serious time with the book studies. Oh, we've also taken family pictures (watch for those) & celebrated Thanksgiving with our Church fellowship. Never a lack for things to do 'round here. Did I mention hunting thrown into that mix? Gotta restock the freezer for another year ya' know. Our crew eats heartily, though it does slow down for winter when they are not quite as active physically.

This good food we grow is such a blessing to our family too. The value is priceless in so many ways. I'm continually amazed at how much I'm learning to cook with new fresh garden goodies ... and that my family tries it & most often enjoys it is a huge additional blessing! They're learning to grow & eat good healthy foods through this life we live here @ Klasse Woods.

Of course, wrapping things up for winter seemingly never ends. I'm still hoping to get the Fall cleaning done, including windows inside & out. Closets will be next ... and I can always hope for a few minor improvements indoors ??

Meaningful Memories

Two years ago today, my little sister went to heaven. At nearly 41 years (she's 40 in the picture above), she had far outlived her life-expectation. She was physically & mentally challenged, yet in spite of her condition she left a legacy, through the efforts of our parents -- because our parents (along with a few other such parents in our community) foresaw the need their challenged children would have when they would be adults.

A pilot project group home was begun in the mid-80's in small-town Hague, Saskatchewan. That first home, Sunshine Housing, was an astounding success. So much so that, by the time of Vonda's passing on September 8, 2008 there were no less than 42 such homes around the province.

My sister Vonda had some of the best years of her life as an adult, with fewer health issues and great opportunities living in "her own home" in Saskatoon. Thanks in great part to the SAI program workers.

And ... the legacy lives on in the life of our youngest brother, also challenged, who even today enjoys a quality of life beyond our best imaginations for them. And of course, many others also benefit from the legacy -- not only those challenged, but also the support staff people and their families who benefit from the career opportunities and love these precious people have to offer. A whole industry has grown out of this legacy. Small town Hague thrives, in part, because of what Sunshine Housing has to offer -- they now have not one, not two, but three houses which are home to challenged adults & offering respite to their younger peers.

A Precious Memory:
As I had requested, my folks sent this picture of my little sister Vonda in a special dress Mom made for her:

The other day, we made another memory -- we dressed up our own little Faith Mattaya in that Holly Hobbie dress Mom made for Vonda. It fits Faith Mattaya at 18 months except for the length. Vonda wore it at about 9 years of age.

Dressing Faith up in this memorable dress is just like playing dolls. We doubled the precious memories!!!!

I am just so glad that we have the assurance of meeting Vonda in heaven one day ... and the knowledge that she is in a better place with no more suffering really blesses me too.

Butterflies or Back to School?

As a home schooling family, just like everyone else, we often get asked the question "When are you starting school?" This year, having the market garden which is still producing in it's bounty, it is rather hard to set a start date as we have done in years past.

This year, like most of the rest, our summer has been ripe with learning opportunities: Marketing & Math are excellent training for the older boys. The younger boys also have a myriad of learning opportunities as they observe their world of wonder, things that their older siblings have already gleaned.

Just one science project that the twins are observing is the process of a caterpillar they found change into a cocoon, then a chrysalis and finally into the butterfly that they have determined through research that it will become --- so much more fun & real & enduring than learning from a book. We review Math, addition & multiplication, happens in the garden while picking 5 handfuls of 10 beans or 8 sets of 3 peas -- then whispering to Mommy how many beans/peas they picked etc. The concept of dozens happens while washing & packing eggs into cartons. Temperature is watched closely on the computer weather website -- do we need to water the garden today or cover it because it might freeze tonight? Will we have a few dry days in a row to cut the hay & get it baled before it gets rained on? Of course, counting money is a natural after a successful day at the market -- checking the coins to find special ones to add to their collections is incentive enough to rifle through the change & identify each one!

Of course, as home educating parents, we also know where our students are at - what they are capable of learning and/or need yet to learn - so we can capitalize on those prime opportunities that God gives to input new information into their lives or emphasize facts, theories & character into our children. Each day God gives grace & insight, He is there to fill our gaps & to "take back the years that the locusts have eaten" when we fail. Though we try not to fail, being human, we often fall short. Yet, He has blessed us with each child. It is He on Whom we can rely to teach & direct each child into their strengths & purpose for which He has made them. He loves them all infinitely more than we ever could, yet He saw fit to give us the joy of loving, knowing & training each child. What an honor! We strive to be found faithful & look toward the eternal reward, to hear His words "Well done, though good & faithful servant."

So, in reality, we are always in school - the school of life. Our school never ends, though we do put away some books & scale back the academic schedule for the busy outdoor summer months, but we never need to go back to school. We're always learning - a goal we hope to instill on our children is a "love of learning" along with the skills to learn.

A Hubbard

I'm wondering if the "Hubbard Squash" is named after "olde Mother Hubbard"? It certainly would have filled up her cupboard, lol!

Our little cowgirl is riding it like a bronc ... it's almost that big, just not bucking.

Apparently some folks prefer the hubbard to pumpkin because the flesh is smooth, not stringy like pumpkin can tend to be ... and just as sweet or sweeter. So if you have a hankerin' for some pumpkin pie? You know where to get the fresh squash for the filling.

Talking Turkey

Wow, the weeks are flying by and we're already looking at the end of summer 2010!

This year we tried raising turkeys. We'd heard they are rather fragile & finicky their first 8 weeks or so ... and that was our experience also. Now they're growing good and happy in their portable sheltered home.

We have 31 of the original 50 turkeys left, but these are hale & healthy. Growing & garbling -- I actually kind of like their "turkey talk". What do you think? (You can hear our princess in the background too -- she loves the animals ... a farm girl through & through, lol!)

Having heard the phrase "talking turkey" I wanted to check out what it means. Do you know what it means? It's actually like someone saying to you "let's get down to business" ... or "Let's get serious and talk business now!"

Yup. Turkey is part of our business now.

Have you ordered your 2010 Thanksgiving/Christmas turkey yet? As you can see, supplies are limited. They are booked for processing at an inspected facility on September 30 ... just in time for your big Thanksgiving supper!

Garden Markets

When we're not busy at the Neepawa market we're getting ready for it ... or the CSA baskets which are more of the same delivered on Tuesdays to Brandon.

We're also trying a roadside market at the end of our lane. Saturday morning and early afternoon there is a lot of traffic going to and from Circle Square Ranch. We've done this for two weeks and so far the net profits have been equal to that of our first market attempts in both Brandon and Neepawa. This is certainly less driving which is a huge bonus!

Who knows? Perhaps we may have the beginnings of a Klasse Woods Country Market??

If it is to be? It will take some persistence, that we know already.

... by hand digging potatoes got old fast. We're thankful to have a neighbor who is willing to come help us "dig spuds" once a week. We're shopping for a tractor that can do everything we need it to. Please pray with us that we will find the right one. Thanks.

Busy Days of Summer

These are busy days which means less posting. However, you may be interested in checking out our Klasse Garden blog which is seeing more activity now that our CSA season is once again under way.

With our fresh garden produce, I've been trying out new cooking adventures once again. Fresh herbs continue to amaze me in their culinary colors & flavors ... they are just not the same as their dried counterparts. Trust me. Try fresh herbs in your cooking, you owe it to yourself.

Kale has grown well for us this year for the first time and I'm learning how to use this incredibly healthy green ... in salads, stir-frys, smoothies, etc.

Yesterday I tried making Kale Chips with great success -- they are almost as good as potato chips and go well with a BBQ meal, or for a healthy savory snack!
Today, I made Kale Krisps ... WOW! says it all. My boys were asking for more. I quickly snatched up the last bite to give it a try, lol!

Franklin Springs blog alerted me to this need ... I'm sharing it with you. Here is a press release that reveals the strength and resilience that defines this champion of the faith:

AGOURA HILLS, Calif., June 23—Internationally-beloved disability advocate, artist and quadriplegic Joni Eareckson Tada has been diagnosed with breast cancer, it was announced today by Doug Mazza, Joni and Friends International Disability Center president and COO, following confirmation by her physicians.

“Joni is to undergo several more tests, followed by surgery within the week,” said Mazza. “The extent of the cancer will not be determined until the procedure.”

Ken Tada, Joni’s husband of nearly 28 years, is very hopeful. “The doctors have assured us that more advancements have been made in the last five years in treating breast cancer then in the last 150 years,” he said. “We are confident Joni is in very good hands.”

Joni echoed Ken’s sentiments. “I’ve often said that our afflictions come from the hand of our all-wise and sovereign God, who loves us and wants what is best for us. So, although cancer is something new, I am content to receive from God whatever He deems fit for me,” she said. “Yes, it’s alarming, but rest assured that Ken and I are utterly convinced that God is going to use this to stretch our faith, brighten our hope and strengthen our witness to others.”

Joni, a quadriplegic for more than 40 years, is founder of Joni and Friends International Disability Center, and has been a strong advocate for people with disabilities. She has served on the National Council on Disability and the Disability Advisory Committee to the U.S. State Department. She is senior associate for disability concerns for the Lausanne Committee for World Evangelization and serves in an advisory capacity to the American Leprosy Mission, the National Institute on Learning Disabilities, as well as on the boards of reference for the Christian Writers’ Guild and the Christian Medical and Dental Society.

“We’ve always prized the ministry God has given Joni and Friends to people facing a variety of disabilities; everything from autism to Alzheimer’s, from spina bifida to spinal cord injury,” said Joni. “For years I have hoped that my quadriplegia might encourage people struggling with cancer ... now I have a chance to truly empathize and journey alongside, affirming that God’s grace is always sufficient for whatever the disease or disability.”

Following surgery, Joni will receive treatment based on the findings. “Thankfully, my quadriplegia does not significantly impact either the surgery or the treatment. I’m like any other woman who has breast cancer,” said Joni. “I want to pour all my energies into getting better.”

Our roof got re-done last week, between rains. Praise the Lord.

It was done without mishap for which we sincerely prayed & are sincerely grateful. All praise to God, our Protector!

The high side was NOT FUN! Caution & safety measures like safety harnesses & deliberate unhurried work along with common sense helped the men to get the job done well and in good time.

While we haven't been receiving the torrents of rain that surrounding areas have been -- like six inches within a week just South of the Souris River -- we did receive a good inch this morning within just 20 minutes.

It made our own private waterfall just out the back door -- sound effects and all!

At times like these, we're thankful to have sandy soil -- not much damage to the gardens & field because the water soaks away quite quickly.

Since we haven't gotten a lot of rain this week, we're thankful for this moisture.

To date, we've also not been in too dire need of intermittent rains sufficient to nourish the land.

Dandelion Delights

Dandelions are a seasonal thing. They bloom for a couple weeks and then they are done for the most part. I refuse to chemicalize my yard to get rid of them for in doing such I also put the health of my children at risk. Instead, they delight in picking flowers for Mommy -- and I put them in crystal vases to brighten our home.

Did you know that dandelions are also VERY healthy? Add the tender greens leaves to salads, the powdered root cleanses the blood and even the bright yellow flowers can be use to make Dandelion jelly -- a local entrepreneur that we've met at Farmer's Market & homeschool functions is known worldwide for her "Dandelion Jelly".

Dandelions can also be FUN. Brayden's brilliant idea blossomed:

Then our littles spent delightful hours in the dandelion patch -- enjoying the sunshine, the flowers and being creative.

... making dandelion shields with the tennis racket reminded them of the fun at Grandma's house too. They've spent hours playing SnaPics at Grandma's house (SnaPics were a toy made by Tupperware in days long ago).

It never ceases to amaze me ... the things little minds can come up with.

... and as usual, the cheapest things make the best toys!

A Time to Re-do the Roof

This nifty seeder has been on Ken's wishlist for a while, but this year it was promoted to being a part of the resources here @ Klasse Woods. It is the perfect thing to plant a market garden -- in fact we bought it from some very successful market gardeners who are finished their career.

It does the tedious backbreaking work of precisely seeding, properly spacing the seeds, then packing them as well ... all in one pass. What a blessing it is proving to be.

Poplar Prime Time

The oldest three of our young men have been busy felling & peeling poplar logs.

There is a small window of time in spring that is prime time for this project ... which will make it possible to finish the project later in the year. Grandpa told them they had to wait until just the right time to harvest the logs & peel them - in spring.

Throughout the summer, the logs will dry out & then they will be ready to be used.

It's a lot of work, but interesting and fun ... not to mention a great use of their time and a great productive way to enjoy the outdoors in early spring.

Shaping Up

Five new candles took shape this week. Brayden has been busy, with some help from the rest of us, making some new molds for his candles. It was nice to have two new flower molds ready for Mother's Day. In fact, that's a wonderful Mother's Day gift for me -- to see my dreams coming to reality. Thanks Brayden!

The little violin mold was the inspiration behind the whole candle business just over six years ago. Our first method of molding the violin trio proved to be less than satisfactory ... it has taken a lot of persistence and patience to finally have the time & resources to finally bring this to fruition.

Watch for the remainder of the strings trio in the months to come...

Cambodian Fauna

The spider was about four inches across. This one was in the house I stayed in - they tried to get it out, but didn't succeed at that. There were quite a few of these in various locations.

Skinny chickens everywhere ... as well as wild dogs -- only a few well-to-do people have pet dogs.

A lot of lone cows here and there.

We saw a few monkeys once, but didn't get the camera out in time to capture that in candid and never saw anymore.

The see-through lizards were everywhere -- ok, mostly on ceilings and walls -- I kept trying to get a better shot.

Generally, not a lot of wildlife.

Faith Mattaya welcomed him back too -- at just 15 months, we weren't sure what her reaction would be ... would she have "forgotten" him? Or would she be shy? Nope, not at all, there was no hesitation to run and give him a big hug - even though she had just awoke from a nap. The pictures are a blur, it all happened so fast ... but the essence is there so I've posted them anyway.

WW Chiffon Cake

This fabulous chiffon cake is made with only wholesome ingredients, including whole wheat flour ... and yet it still rose to the heights and retained its fluffy, moist texture until it was consumed -- and even in this household it lasted just over 24 hours. Well, it is a big cake!

Perhaps, I'll try little cakes sometime. You know they do have little tube pans now ... maybe someday.

Anyway, here's the recipe that Margaret shared with me a few years back (Thanks Marg!):

Chiffon Cake

1 1/2 c. ww. flour
3 tsp. baking powder
1/2 c. olive oil
3/4 c. cold water
10 egg whites
10 egg yolks
1/4 tsp cream of tartar
1 c. sugar (or xylitol for lower carbs)
1 tbsp. guar gum

In a smaller bowl mix sugar, baking powder, oil, egg yolks and cold water.

Beat egg whites until stiff. Add cream of tartar. Fold in egg mixture gently until blended.

Pour into ungreased tube pan. Bake in slow oven -- 325 for 55 minutes on lowest rack. Increase temp. to 350 degrees, continue baking for 10-15 minutes. Remove from oven, invert pan to cool.

Corbyn, leaving for Cambodia with his Uncle Darryl who is going on a missions support trip with Children's Camps International. They will be gone from March 30 - April 15, 2010.

Corbyn left for Cambodia on March 30th @ 6:00 AM. He's getting there on April 1st -- 26 hours after leaving Winnipeg airport. He's flying over the date line and missing his birthday on March 31st.

What a memorable trip right from the get go!

The two of them are going to encourage the believers in Cambodia - distributing blankets & clothing as well as helping at various VBS camps numerous Churches are hosting.

This is just a short trip around the world ... are you prepared for THE flight? When Christ sounds the trumpet to call His loved ones home, will you meet Him in the air?

These 20 Years

It has been our joy to know & nurture this young man for these last twenty years. They've been good years together. We are so grateful to God for sharing him with us.

It was our privilege to celebrate his 20th birthday on Monday, March 29th though his actual birthdate isn't until the 31st. Read more here.

Special note: I was very thankful to finally find my missing recipe for chiffon cake (Thanks for the recipe, Margaret!) Can you believe this hightop cake was made with whole wheat flour? It was delicious with whipped cream & cherry sauce!

THE SECRET OF PRAYING

The secret of praying is to PRAY.

We go to seminars on How to Pray and yet still do not pray. We read books on How to Pray and yet still do not pray. I believe that there is only one way to learn how to pray and that is to PRAY. We must open our mouth and speak to God.

It is sad to find believers who are reticent about praying. They don't open their mouths in a prayer meeting. Many don't even want to come to a prayer meeting. What is wrong? We should be known as the people who "call upon the Lord." Praying should be second nature to the believer
Pray out Loud!

Don't just pray in your mind in your prayer time. There will be times when you will do this because prayer should be a habitual part of our lives. But when you have your specific times of prayer, pray out loud. Get used to hearing your own voice in prayer. It can be strange when you first start but it is the way to get used to praying.

I have always prayed out loud in my personal times of prayer and found it a great blessing. Firstly, if I pray out loud, I know when I stop praying! And that can often happen. When you pray in your mind it is easy to go into dreamland and soon forget what you are praying about. When you start to do this when praying out loud, you come back to prayer with a jolt when suddenly there is silence! It also keeps your mind on what you are doing. It also gets you used to praying out loud in corporate prayer meetings.
Teach your Children to Pray out Loud!

Teach your children to pray out loud so they get used to praying. Praying should be normal to them. Encourage them to pray out loud in their personal praying. Encourage them to pray out loud at Family Devotions.

When the disciples asked Jesus to teach them to pray, He didn't go into a great discourse on how to pray. Instead, He prayed a prayer. He showed them how to pray by praying. We learn to pray by praying. Your children learn to pray by praying.

I am frustrated when I go to a prayer meeting and have to listen to a long message. I thought we had come to pray! Why don't we get stuck in and pray? The need is so great. The nation is in peril. Our only hope is to call upon the Lord. Let's do it.

We all know 2 Corinthians 7:14, "If my people, which are called by my name, shall humble themselves, and hear another sermon..." Ooops! Did I get it wrong? Sorry. But isn't that what we do? We come together for another sermon. Prayer is the last thing on our minds! But God won't save our nation by another sermon. He will save our nation when we pray.

Let's get it right, "If my people, which are called by my name, shall humble themselves and pray, and seek my face, and turn from their wicked ways, then will I hear from heaven, and will forgive their sin, and will heal their land."
Pray out Loud at Church!

My husband was convicted about this Scripture. Therefore, we no longer have church as usual. We don't have a prayer meeting before the service where about three or four people turn up. We pray when we come together as a body. We spend, sometimes up to an hour, praying together as believers before we open the Word of God. Guess who is first to pray. The moment my husband says, "It's time to pray," the children run to the front. They get in line to pray for our nation and the different nations of the world. They are learning to be intercessors as they are given opportunity to pray.

Fellow believers, let's get praying.

Pray individually.

Pray together as husband and wife. Faithfully pray together each day for each of your children and their needs.

Pray together as a family. Encourage all the children to pray.

Get involved in a prayer meeting where people love to pray. Or start one in your home. Gather neighbors, friends or whoever you can together and incorporate your whole family. Pray for the nation. Pray for Israel. Pray for the nations of the world. Pray as God leads you.

For the last ten years we have prayed faithfully every week with folks who live around us here in the Tennessee woods--people from different denominations who normally would not see eye-to-eye. But we don't come together to discuss doctrine. We come together to pray. Consequently, God has drawn our hearts together in love and unity.

Now you know the secret! You don't need to read any more books or hear any more sermons on prayer. Just start praying--and remember to pray out loud.

Changes & Learning Curves

Whew, what a week!

Monday - Molly arrived and threw us into learning curves with milking by hand. Hey, we're not the only ones, she had to learn with the guys what hand milking is all about. Apparently the milker we have has issues - we're trying to get those resolved.
- Corbyn's ticket was bought for his trip to Cambodia, March 30-April 14, 2010. He's going with his Uncle Darryl on a ministry trip for Children's Camps International. Please pray with us for them & those they seek to serve through this great opportunity!

Tuesday - we finally located and brought home 50 new laying hens. They're as hard to find in Manitoba as the proverbial "hens teeth", lol! From now on, we may just hatch our own in an incubator. Wouldn't that be fun??

- Corbyn started part-time work @ Rosehill Woodcrafters Ltd., but when he came home after his first day he was already full-time. Having him gone all day everyday has really made a huge change in all of our lives!! Of course, he has learning curves to go through at work, but we do too ... changes in schedules & responsibilities etc.

Wednesday - made our first batch of yummy yogurt. Whoohoo!
- Faith Mattaya decided it was worth it to learn how to walk with boots on so that she can go outside, see the animals & play with the kitties.

Thursday - A Happy 6th Birthday for Benjamin & Bronlin. It is so hard to believe that they're already six!! We really celebrated their birthday already on Sunday when Grandpa & Grandma Wiebe were here for a wonderful visit.

again a long day of baking & preparing for Farmer's Market on Friday.
- we made our first butter ... with great success!

Friday - Farmer's Market & shopping in Brandon.
- failed our first attempt @ making cottage cheese ... much to the delight of the cats & dog!

Saturday - resting up and preparing for Sunday & company (house cleaning).
- made our second batch of cottage cheese with success! Yay!

Meet Molly

Our new resident registered Brown Swiss. She's so gentle & patient. She makes this place a real farm!

... notice the llamas are "meeting" her too? They are very curious creatures -- and protective! They have lived here at Klasse Woods longer than we. I guess you could say we "inherited" them with the farm. It is taking a long time for us to win their confidence though, they are still very wary of us.

Health Habits - Oxygen

Oxygen is necessary for life - our life. In fact, without it we die! I know, that's not news to you ...

But did you know that cancer causing free radicals DIE in the presence of oxygen? Since every body has free-radicals, it is in our best interest to give our bodies the optimum edge in the battle to stay on top of that internal situation.

So, how can we get more oxygen into our bodies so that they can function with better efficiency, sustaining quality life and eradicating those pesky errant cells that threaten to take over?

One simple, inexpensive way to get more oxygen is to breathe deeply. Most of us use only about 10% of our lung capacity, there is lots of room to expand that:

- inhale a huge breath slowly through your nose. Let it fill your lungs and then take conscious note of filling your abdomen with air as well.
- exhale slowly, blowing through your mouth.
- try to exhale for longer than you inhaled.

Why? Because when we exhale we are not only releasing carbon dioxide, but also the extra, unused oxygen ... AND TOXINS. The toxins are what you really want to discard.

- once you've noticed how much more air you can get into your lungs try holding your breath for 10 seconds or so.
- when you've mastered that, try increasing the length of your hold.

Why? Because we breathe out so much unused oxygen - this is a conscious plan to use as much as you can. While you can't do this with every breath, the extra oxygen you do get each and every time you do this exercise will promote your good health.

Make your lungs work FOR you.

Do this exercise before you rise and when you retire - and whenever you think of it in-between.

Make it a daily health habit!

Spring?

About a month ago we saw robins already - yeah, I know it seems terribly early for that.

Today the guys spotted horned larks and bluebirds.

Add to that these warm temperatures that really do make it feel like spring. May be it is just around the corner -- it will likely get colder yet and a couple more storms may blow, but it is still a fact that we're almost through another winter.

Our Beeswax Candle business has made strides this winter ... so much, in fact, that we are already marketing them at the Brandon Farmer's Market every Friday.

The sweet smell of beeswax fills our home as Brayden makes his creations in our basement work room. Many of the candle shapes are formed from molds we've made ourselves. The sense of accomplishment is just as sweet ...

As new things go, we've experienced some challenges in the learning curve - like using the correct wicking as well as the correct wick thickness for each candle - but now, some of those hurdles are behind us, the candles burn brightly clearing the air as only beeswax candles can do and adding much delight to our decor.

Delightful, beautiful, functional and healthful, these candles will make great gifts for anyone and everyone - I know I certainly feel like I've received a gift every time we get to do a trial burn test of one of the newest creations.

Little Helpers

In the beginning, work was a pleasure. We know that God created it as a good thing since it was created before the fall of man.

Have you noticed how young children revel in "helping Daddy" or being "Mommy's helper"? Doing a job well or doing something without being told makes little ones stand tall ... then again, we all feel good after a job well done, don't we?

This struck me as being material for a blog post today when I was buying dishwasher soap -- I buy the dishwasher tablets. For two reasons:

1. In my opinion they do a better job getting the dishes clean.
2. Then my little helpers can do that extra little job too. It is a reward that makes filling the dishwasher worth their while!

The cashier that served me had never thought of letting little ones do this job, but she realized right away the value of the idea.

She was equally impressed with another idea that I shared with her - that of storing dishes in the lower cabinets in your kitchen. Again, so that little helpers can readily help to set the table and/or empty the dishwasher. Little ones as young as three and even younger can begin to help around the house. Everyone can earn their keep, so to speak -- after all, everyone likes to eat!

"If a man will not work, he shall not eat..."

These are just a couple ways that we can capitalize on the natural joy that our youngsters have when working. Making it fun and meaningful at that age builds in them the character quality of responsibility and establishes worth in the family.

It also prepares them for life ... and isn't that what parenting is all about?
